1 lb. lean (at least 80%) ground beef
1 medium onion, chopped (1/2 c.)
1 package (1 oz.) Gluten Free (Old El Paso) taco seasoning mix
1 can (4.5 oz.) Gluten Free chopped green chilies, drained (Old El Paso)
2 extra-large eggs
1 c. milk
1/2 c. Gluten Free Bisquick mix
3/4 c. (3 oz.) shredded Monterey Jack or Cheddar cheese
3/4 c. chopped tomato
1-1/2 c. shredded lettuce, if desired
Salsa, if desired
Sour cream, if desired

Preheat oven to 400º. Spray a 9" glass pie plate with cooking spray.

In 10" skillet, cook beef and onion over medium heat, stirring occasionally, until beef is brown; drain.
Stir in seasoning mix; spoon into prepared pie plate.
Top with chilies.
In small bowl, stir eggs, milk and Bisquick until blended; pour into pie plate.
Bake in 400º oven for 25 minutes.
Top with cheese and tomato; bake 2-3 minutes longer or until cheese is melted.
Remove from oven; let stand 5 minuted before serving.
Serve with lettuce, salsa and sour cream, if desired.
