2 extra-large eggs
1-1/2 c. sugar
1/4 c. butter, softened
1/4 c. shortening
2 c. Gluten Free Bisquick mix
1 tsp. ground cinnamon

Directions:
Directions:
Preheat oven to 375º. Bake on ungreased cookie sheets.

In large bowl, mix eggs, 1 c. sugar, butter and shortening.
Stir in Bisquick mix until dough forms.
In small bowl, mix remaining 1/4 c. sugar and the cinnamon.
Either shape dough into 1-1/4" balls or use a cookie scoop.
Roll balls in cinnamon-sugar mixture; place 2" apart on ungreased cookie sheet.
Bake in 375º oven for 10-12 minutes or until set.
Immediately remove from cookie sheets to cooling racks.
