3 extra-large eggs
1-3/4 c. milk
1/4 c. butter, melted
1-1/2 tsp. vanilla
1 c. flaked or shredded coconut
3/4 c. sugar
1/2 c. Gluten Free Bisquick mix

Directions:
Directions:
Preheat oven to 350. Grease a 9" glass pie plate with shortening or cooking spray.

In large bowl, stir together all ingredients until blended.
Pour into prepared pie plate.
Bake in 350 oven for 45 to 50 minutes or until golden brown and knife inserted in the center comes out clean.
Store any remaining pie covered in the refrigerator.
