Coffee Cake:
4 extra-large eggs
3/4 c. milk
1/2 c. butter, melted
2 tsp. vanilla
1 box (3 c.) Gluten Free Bisquick mix
2/3 c. granulated sugar
1 can (21 oz.) Gluten Free fruit pie filling (any flavor)

Glaze:
1 c. powdered sugar
2 T. milk

Directions:
Preheat oven to 375º. Grease a 9"x13" baking pan with shortening or cooking spray.

Coffee Cake:
In large bowl, stir all coffee cake ingredients except pie filling until blended; beat vigorously 30 seconds.
Spread 2/3 of the batter (approximately 2-1/2 c.) in prepared baking pan.
Spread pie filling over batter (filling may not cover batter completely).
Drop remaining batter by tablespoonfuls onto pie filling.
Bake in 375º oven for 20-25 minutes or until golden brown.

Glaze:
While cake is baking, combine in a small bowl, the glaze ingredients; mix until smooth.
Drizzle glaze over warm coffee cake.

Serve warm or cool.
