1 c. sugar
1 c. brown sugar
1 T. cinnamon
1/8 t. salt
1 egg white
2 t. vanilla
3 cups almonds (or other nuts)
2 T. water

Directions:
Directions:
Mix together sugars, cinnamon, and salt. Set aside. In a large bowl, whisk together egg white and vanilla until frothy. Add almonds. Thoroughly coat almonds in the egg white mixture. Add cinnamon mixture to the almonds and toss to coat. Thoroughly spray your crock pot with non-stick cooking spray and add almond mixture. Cook on low for 3-4 hours, stirring every 20 minutes. In the last hour, add the 2 T water and stir well. This ensures a crunchy, yummy coating. (*Make sure to cook the almonds at least 45 minutes after adding the water.) You have to stir really well. Spread almonds on parchment paper to cool, breaking up large clumps. Cool and enjoy!
