2½ - 3 pound frying chicken, cut in pieces.
1 cup all-purpose flour
1 teaspoon salt
¼ teaspoon pepper
½ teaspoon paprika
1 teaspoon parsley flakes
¼ teaspoon sage
¼ teaspoon onion salt
¼ teaspoon garlic salt
Optional: You may substitute seasoned salt (such as Lawry's) or Poultry seasoning instead of sage, onion,& garlic salts)

Directions:

1. Mix flour and seasonings in a paper or plastic bag.
2. Shake 3 or 4 pieces of chicken at a time in bag, to coat thoroughly.
3. Starting with meaty pieces, place chicken in heavy skillet in hot oil, ½ - 1 inch deep.
4. Cover; cook 10-15 minutes over medium heat.
5. Remove cover, reduce heat to medium low to low, and keep turning chicken until are pieces are
uniformly browned, 20-25 minutes.
6. Drain on paper towels.
