2¾ c. flour
2½ tsp. baking powder
½ tsp. salt
⅔ c. shortening (I use melted butter)
1 box light brown sugar
3 eggs
12 oz. Nestles chocolate chips
1 tsp. vanilla

Directions:
Directions:
Mix: flour, baking powder, and salt in a bowl. Set aside.
In another mixing bowl: Add light brown sugar. Melt shortening. Pour over brown sugar. Mix well. Add eggs one at a time. After each egg, add dry ingredients. Mix well. Add vanilla and chips.
Place in well-greased pan for 25 minutes at 350º.
Let cool before cutting.

For years at DCD, before the Holiday Break, DCD colleagues used to have a "Cookie Swap." My favorite treats were the Fudgie Scotch Squares that Mimi used to bring. Mimi loved my Congo Bars. When the "Cookie Swap" lost it novelty, and we no longer baked and exchanged cookies, Mimi baked a batch of her yummy Fudgie Scotch Squares for my family, and I baked a batch of Congo Bars for Mimi's family!
