5 lb. bone in pork roast
2 (32 oz.) cans silver floss sauerkraut
4 lb. russet potatoes
1 stick of butter
1/4 c. whole milk

Directions:
Directions:
1. Preheat oven to 225º

2. In a large dutch oven, warm enough oil to ensure roast doesn't stick (approx 1/4 c.)

3. Liberally salt and pepper pork roast then sear all sides. Remove roast from dutch oven and use sauerkraut juice to deglaze (clean out) dutch oven.

4. Put pork roast back in dutch oven, cover with sauerkraut, cook in oven for approximately 8 hours.

5. Serve with mashed potatoes.

Sub crock pot for dutch oven. Cook on low for 8-9 hours.
