2 tsp oil
1 c chopped onions
1 c thinly sliced carrots
1 c diced potatoes
½ lb polish sausage, sliced and quartered
1 can diced tomatoes (19oz/540ml)
4 c shredded cabbage
2½c hot beef stock
¼ c fresh chopped parsley
1 tbsp sugar
1 tsp paprika
½ tsp pepper

Directions:
In a large soup pot, heat oil over medium heat. Cook onions, carrots, potatoes and sausage for 5 min or until onions softened. Stir in tomatoes, cabbage, beef stock, parsley, sugar, paprika, and pepper.
Cover and bring to a boil. Reduce heat to medium-low; cover and simmer for 20 minutes or until vegetables are tender.

From Canadian Living. Original recipe calls for kielbasa but we always used polish sausage. A yummy cool weather comfort soup. Scott’s favorite soup. Can easily be doubled.
