2 cans (16oz.each) tart cherries drained, reserve 1/2 C. of the juice.
1 C. sugar
1/4 t. salt
1/4 t. cinnamon
1/2 t. vanilla
1/8 t. red food coloring
3 T. cornstarch

Directions:
Directions:
Use the pie crust recipe in this book.

In a medium saucepan over medium heat add:
sugar, cornstarch, salt, cinnamon, 1/2 C. of the reserved cherry juice, red food coloring.
Stir constantly until thickened.
Add the drained cherries and vanilla.

Place in the prepared pie crust, add the top crust & crimp, make 6 slits in the top.

Place a crust protector on the pie, or use strips of aluminum foil to prevent the crust from getting dark.

Bake for 15 minutes at 425º, reduce heat to 350º & bake an additional 45 minutes.

Place on a wire rack to cool.
