1 T butter
1 egg, at room temperature preferably
1 T milk
1 t vanilla extract
1 1/2 T fine granulated sugar
2 T all-purpose flour
1/8 t baking powder
pinch of salt
spoonful of Cool-Whip
sprinkle of chopped pecans
1 large strawberry, sliced in half
1 T strawberry jam or jelly

Directions:
In a coffee cup add the butter and pop it in the microwave for about 15 seconds until it is melted.
Remove it from the microwave and add the egg, milk and vanilla to the coffee cup. Wish it tell right there inside the cup. Once well combined, add the sugar, flour, baking powered and salt. Whisk again until well combined.
Pop the cup back in the microwave for 1 minute and 25 seconds. This is for a 600W microwave, adjust accordingly. Once done, let it cool.
After it is cool, spread the jam or jelly over the top of the cake.
Add the spoonful of Cool-Whip. Top with the strawberry and sprinkle with the chopped pecans.
