Chipped Beef and Onion Cheese Ball Recipe

2 small jars or 1 large jar Armour dried beef, chopped or cut into small pieces
2 packages (8 oz. each) cream cheese, softened to room temperature
2 bunches green onion, finely chopped or cut

Dice onions and beef very fine; mix together in a bowl; set aside 1/4 of mixture.
Add cream cheese to remaining onion-beef mixture in bowl; using either your hands or a spoon, work onion-beef mixture into cream cheese until well blended.
Form mixture into a ball; using your hands, pat the reserved onion-beef mixture on the outside of the ball.
Chill for 1-2 hours before serving; this allows for flavors to marry.
Serve with crackers.

The entire onion-beef mixture can be mixed with the cream cheese.
Cheese ball could be rolled in either chopped beef, green onions or chopped nuts, if desired.

Let chilled cheese ball warm up a bit before serving; makes it easier to spread.
