2 cups Sugar
2 cups all-purpose flour
½ tsp salt
1 cup butter
¾ cup water
5 TB cocoa powder
½ cup buttermilk (see tip in body of post)
2 eggs
1 tsp baking soda
For Frosting:
6 TB buttermilk (milk works fine too)
½ cup butter
5 TB Cocoa Powder
1 lb box powdered sugar
1 tsp vanilla
1 cup chopped walnuts

Cake Bites:
1. In a large bowl, mix sugar, flour, and salt, set aside. In a saucepan, bring water, cocoa powder, and butter to a boil. Remove from heat and pour over dry ingredients, lightly mixing together. Add milk and eggs and blend well.(batter will be thin)
2. Place 1 tablespoon of batter in the cups of a heavily greased mini muffin tin. Bake at 350 for 10-12 minutes or until baked through. Let cool before gently removing muffins to a wire rack to completely cool.
Frosting:
1. Heat milk, butter and cocoa in a medium saucepan until bubbly. Mix in sugar and vanilla until smooth. Stir in nuts until incorporated. Carefully spoon about a tablespoon of frosting over the top of each muffin bite. Let set before eating.
