3 Chicken breasts cut lengthwise to make thin cutlets (will have 6 cutlets)
1 teaspoon garlic powder
salt and pepper

For the Bruschetta
3 Roma tomatoes, diced small
1/2 red onion, chopped small
1 jalepeno, diced small
1 teaspoon garlic, minced
grated Parmesan cheese
balsamic vinegar
salt and pepper

Directions:
Directions:
Cut chicken breasts lengthwise to create thin cutlets. Heat olive oil in pan to medium heat. Sprinkle chicken with salt, pepper and garlic powder then saute for about 6 minutes per side until browned.

For the bruschetta, dice tomatoes, half red onion, jalepeno and garlic into small size pieces (resemble fresh salsa). Add salt and pepper to taste.

Grate Parmesan cheese to go on top of the salsa when ready to serve.

When chicken is done, plate it, top with bruschetta mixture and Parmesan cheese then drizzle with balsamic vinegar.
