1 1/2 pounds lean shoulder pork – cut in strips 2 1/2 x 1 1/2"
2 tablespoons fat
1/4 cup water
2 TBSP cornstarch
1/2 TSP salt
1/4 c. brown sugar
1/4-1/3 c. Vinegar
1 c. pineapple juice
1 Tbsp. Soy sauce
3/4 c. green peppers, cut in strips
1/4 c. thinly sliced onions
1 No. 2 can pineapple chunks

Directions:
Directions:
Brown pork in fat. Add water, cover and simmer for 30 minutes. Combine cornstarch, salt, brown sugar, vinegar, pineapple juice, soy sauce, cooking until slightly thick, stirring occasionally. Pour sauce over hot pork, let stand at least 10 minutes. Add green peppers, onion and pineapple chunks and cook for 2 to 3 minutes. Serve over rice
