1 lb. pea or navy beans
1/2 tsp. Baking Soda
1/2 tsp. salt
1/2 c.maple syrup
1/2 tsp. dry mustard
1/2 lb. salt pork or bacon, cut in pieces
1 small onion, chopped
hot water

Directions:
Directions:
Soak beans over night in water; rinse.
Place rinsed beans in a pan; add baking soda; cover and cook until done. To test doneness of beans, remove 1 or 2 beans from pot and blow on them - if peel cracks, beans are done.
Drain beans and put into crock pot.
Add to crock pot, salt, maple syrup, dry mustard, salt pork or bacon, onion and enough hot water to cover the beans. Cook on Low setting for approximately 4-6 hours. If beans start to dry out, add more hot water. You can hardly over cook beans, just keep them moist.
