1-1/2 tsp. cinnamon
4-1/2 c. apples, chopped in small pieces
1-1/2 c. vegetable oil
3 c. granulated sugar
3 eggs, beaten
4-j1/2 c. all-purpose flour
1 c. chopped walnuts
3/4 tsp. salt
2-1/4 tsp. Baking Soda
1-1/2 tsp. vanilla
Directions:
Directions:
Preheat oven to 325º. Grease a tube pan.

In a bowl mix together mix cinnamon and apples; set aside.
In a large bowl mix together vegetable oil, sugar, eggs, flour, chopped nuts, salt, baking soda and vanilla.
Stir in apple mixture.
Pour cake dough into a greased tube pan.
Bake in 325º oven for approximately 1 hour 45 minutes.

No frosting is needed; however if desired, cake can be sprinkled with powder sugar.
