2 c. sugar
1 tsp. cinnamon
1 tsp. vanilla
1 tsp. salt
1-1/2 c. vegetable oil
1 tsp. baking soda
3 c. apples, diced
3 eggs
3 c. all-purpose flour
1 c. pecan pieces (optional)

Directions:
Directions:
Preheat oven to 300º. Grease 2 - 9"x5" loaf pans.

Cream sugar and oil.
Mix dry ingredients.
Alternate adding dry ingredient mixture and eggs to the creamed sugar and oil.
Add vanilla; stir thoroughly.
Stir in apples and nuts.
Pour batter into 2 greased 9"x5" loaf pans.
Bake in 300º oven for 1 hour and 15 minutes.
Cool in pans for 10 minutes; remove from pans and complete cool on rack.
