2 cups Bisquick baking mix
1/4 cup sugar
1 egg
2 T vegetable oil
2/3 cup water or milk

ALMOND CRUNCH TOPPING

1/4 cup toasted chopped almonds
3 T sugar
2 T grated lemon peel

Directions:
Directions:
Heat oven to 400º. Grease round layer pan, 9x1-1/2 inches. Prepare Almond Crunch Topping.

Mix baking mix, sugar, egg, oil and water; beat vigorously 30 seconds. Spread to pan. Sprinkle Almond Crunch Topping over batter. Bake until wooden pick inserted in center comes out clean, 20-25 minutes.

ALMOND CRUNCH TOPPING:

Mix almonds, sugar and grated lemon peel.

HIGH ALTITUDE: Heat oven to 425º. Bake 15 to 20 minutes.
