1/2 lbs. bacon
1/2 cup onion, chopped
2 tbsp. flour
4 tbsp. sugar
1 1/2 tsp. salt
1 tbsp. celery seed
1 cup white vinegar
6 cups potatoes, sliced and cooked
1 small jar pimentos, chopped

Directions:
Directions:
1. Cook bacon until crisp; drain and crumble. Reserve 1/4 cup of drippings.
2. Cook onion in reserved drippings until tender. Blend in flour, sugar, salt, celery seed and a dash of black pepper. Add vinegar and 1 1/2 cups of water.
3. Cook and stir until thick and bubbly. Add bacon and potatoes. Heat thoroughly, toss lightly.
4. Salad is best when chilled for several hours or overnight and reheated just before serving.
