Cauliflower "Rice" Recipe

1 head (approx 1-1/2 lb.) cauliflower
1 (15.5 oz.) can hominy, drained and rinsed
cooking spray
1/4 c. grated Parmesan cheese
1 T. dried chives

Directions:
Directions:
Cut cauliflower into florets and place in bowl of food processor; pulse until finely chopped (resembling rice); transfer to a medium sized bowl.
Place hominy in the same food processor bowl; pulse until finely chopped; add to bowl containing cauliflower; stir well.
Using cooking spray, spray large saute' pan; preheat pan on medium heat, 2-3 minutes.
Place cauliflower mixture in pan; coat with cooking spray; coot while stiring3-4 minutes or until tender.
Remove pan from heat; stir in cheese and chives.
Serve.
