1 small green pepper
4 green onions
2 (151/2 ounce ) cans black-eyed peas, drained and rinsed.
1/3 cup of fresh parsley or cilantro finely minced
1/3 cup good Italian dressing
2 tbsp dijon country style mustard
1/8 tsp red pepper flakes

Chop first three ingredients. Combine chopped vegetables, peas, and next 3 ingredients in a large bowl. Cover and chill at least 4 hours
