2 tbsp flour
2 tbsp butter
3/4 cup milk
1 tsp chopped onion (may substitute onion salt)
1-1/2 cup grated american cheese
3 eggs, separated
1-1/2 cup cooked green asparagus
salt and pepper to taste

Directions:
Directions:
Make sauce with butter, flour, milk. Cook over low heat until thickened and smooth; remove from heat. Add onions and cheese and stir until cheese is melted. Add beaten egg yolks and blend well. Carefully add the asparagus cut in small pieces. Season to taste. Fold in beaten egg whites. Pour into buttered 2 quart casserole and bake at 350 until center is firm.
