4 large eggs
3/4 c. Lactaid milk, Half & Half or Heavy Cream
3/4 c. grated Cheddar cheese
1/4 c. any grated cheese with Jalapeno peppers
1 tsp. coconut oil, MCT or Bulletproof Brain Octane Oil
1 c. slivered ham
1 medium green pepper, diced
1 small onion, diced or Penzeys granulated toasted onion
1 garlic clove, pressed or Penzeys roasted garlic
1/4 t. salt
1/4 t. black pepper
2 T. Parmesan cheese, grated

Mix eggs with dried spices, grated cheese and milk of choice, set aside. In a skillet heated to medium high, add oil of choice and vegetables. Stir-fry for 2 -3 minutes. Then add ham slivers and stir-fry for another 2 - 3 minutes. Put into greased pie pan, spreading mixture out evenly. Pour eggs over contents sprinkle on parmesan and bake 30 minutes in a pre-heated 350º oven or until knife inserted in center comes out clean. Serve with salad. Enjoy!
