2 unbeaten egg whites
1½ c. sugar
⅛ tsp. salt
5 tbsp. cold water
1½ tsp. light corn syrup
⅛ tsp. cream of tarter
1 tsp. vanilla

Directions:
Directions:
Put first 5 ingredients in the top of a double boiler.
Place over boiling water.
Beat with mixer slowly until blended.
Then cook, beating constantly on high spread of mixer until mixture stands in peaks.
Remove from heat add vanilla and continue beating until of spreading consistency - about 5 minutes.

* This makes enough to ice two 9" layers or 1 large cake.

To make Sea Foam Icing use 1½ c. brown sugar instead of granulated sugar and use dark corn syrup.

You can make a fruit filling by adding ⅓ c. chopped dates and ⅓ c. chopped nuts to ⅓ of the icing.
Use the filling between the layers. Ice top and sides of cake with plain icing and sprinkle with shredded toasted almonds or toasted coconut.

A side note from Grandma: If you don't have a double boiler - use a 2 quart saucepan inside a larger one! I have all these years.
