Dough

3 sticks unsalted butter, softened
1 8-ounce cream cheese, softened
3 cups flour
Powdered Sugar

Blend all, form into a single ball, cover with plastic wrap and refrigerate overnight.

Remove dough from frig, and form individual 1+ inch balls. Roll in powdered sugar, spread with nut filling, Roll like a jelly roll, fold under ends (each roll about 4 " long), curve slightly, place on cookie sheet with seams down and bake.

Cool on wire rack. Dust with powdered sugar. Store in air tight containers in a cooler part of the house.
 

Nut Filling

2 pounds walnuts, finely ground
3/4 cup lt brown sugar
3/4 cup sugar
1/4 cup milk, maybe more
1 teaspoon vanilla
pinch of salt

Use Food Processor to Grind Nuts

Cook until warm over med-low heat, just until sugars are dissolved. Stir frequently so it doesn't burn or stick. Adjust sugars to taste (should be extra sweet). May need to add more milk for desired consistency. Needs to be sort of thin as it thickens when cooled. Cool completely.

My mom always made nut rolls for Christmas so I carry on the tradition. Everyone loves these! They are extremely difficult, as the filling is a dump recipe mom rattled off one year when I was helping her make them. If you get it too thin, the rolls split and it comes out onto the cookie sheet. I suggest baking one sheet, then adjusting the nut filling if necessary. It takes about 45 minutes to get a sheet ready for the oven.
