1 c. flour plus 2 Tbsp.
1/4 c. sifted powdered sugar
1/2 c. butter, melted
1/2 tsp. baking powder
2 eggs, beaten
1 c. sugar
Grated rind of one lemon
3 Tbsp. lemon juice

Icing: 1 c. powdered sugar
2 Tbsp. lemon juice (or more to make spreading consistency)

Directions:

Combine one cup flour and 1/4 c. powdered sugar; add butter, mixing well. Spoon into 9 inch square baking pan; press into pan evenly. Bake at 350º for 18-20 minutes or until lightly browned. Combine 2 Tbsp. flour and baking powder; set aside. Combine eggs, sugar, lemon rind, and juice; beat well. Stir flour mixture into egg mixture and pour over baked crust. Bake at 350º for 25 minutes or until lightly browned and set. Cool some. Sprinkle with powdered sugar or icing and let cool completely. Cut into squares.
