Crust Ingredients:
2 ½ C. Shredded Dried Coconut
3-4 Egg Whites
¾ C. White Sugar
Pinch of Salt
1 tsp. Vanilla
1 tsp. Almond Extract

1. Mix all ingredients together and press onto a tart pan.
2. Bake at 325º for 15-18 minutes until crust turns golden.
3. Remove and cool.

1-2 pkg. Cream Cheese
1 tsp. Vanilla Extract
1 tsp. Almond Extract
¼ C. Sugar (more if you like more sweetness)
Fresh Fruit (I use sliced Mango and Kiwi but anything works)

1. In a large bowl mix all filling ingredients except for the fruit until thoroughly combined.
2. Fill crust with mixture.
3. Top with fresh cut fruit.

This is good with chopped Chocolate, nuts or no topping at all. Can be made in a pie pan as well.
