1 1/2 cups oil
CAKE
2 cups granulated sugar
3 eggs
2 cups flour
2 tsp. cinnamon
2 tsp. baking soda
2 tsp. vanilla
1 tsp. salt
2 cups grated carrots
1 small bag coconut
1 cup chopped walnuts (optional)
1 small can crushed pineapple

FROSTING
1 8 oz. cream cheese (softened)
1 cube butter or margarine (softened)
2 tsp. vanilla
1/2 bag powdered sugar (1 pound bag)

CAKE:
Dump all the cake ingredients into bowl and mix. Pour cake mixture into a greased 13" X 9" pan. Bake 1 hour at 350º.

FROSTING:
Mix the above frosting ingredients together. Cream together and frost.
