1 c. sugar
½ c. shortening
2 eggs
1 tsp. vanilla
2 c. flour
1 tsp. baking powder
1 tsp. baking soda
½ tsp. salt
2 c. chopped, pared apples
½ c. walnuts
1 Tbsp. sugar
¼ tsp. ground cinnamon

Grease and flour loaf pan, 9x5x3. Mix 1 c. sugar, shortening, eggs and vanilla. Stir in flour, baking powder, baking soda and salt until smooth. Stir in apples and nuts. Spread in pan. Mix 1 Tbsp. sugar and cinnamon, sprinkle over batter. Bake at 350ºF for 60 minutes. Test after 55 minutes, with toothpick. Let stand for 5 minutes and remove from pan and let cool completely before slicing. Enjoy!
