2 cups of water water 110º
2 Tbsp of yeast
2 Tbsp of sugar
1 Tbsp of salt
1/3 cup Extra Virgin Olive Oil
5-6 cups of flour

Directions:
Directions:
In a measuring cup add the water and yeast and proof for 5 minutes until yeast foams and turns a brownish color. Then add the sugar salt and oil and stir until dissolved. Then pour into mixing bowl and add flour one cup at at time and kneed for a total of 8 minutes until soft dough is formed.( The Dough should stick to the bottom of the bowl and pull away from the sides). Shape the dough into a ball and return to the bowl sprayed with Pam. Cover the bowl with plastic let rise 60 minutes and then shape into 5, 12" round sub rolls [Each piece should weigh around 10oz] try and stay even throughout so they turn out better. Then cover with a moist towel covered with Pam and allow to rise a second time for 40-60 minutes.
Preheat oven to 350º bake for around 25 minutes.
When the loaves come out of the oven rub the tops with a stick of butter and cover them with a dish towel to cool. Let the loaves cool for at least 30 minutes before using.
Extras's
add 1/2 cup of oats to the mixture.
Or put honey on top of loafs before baking.
Or cheddar cheese,garlic salt and Italian seasoning before baking
Or Parmesan cheese, oregano, and garlic salt before baking.
