8 4oz Boneless, skinless chicken breasts
1/2 C Egg for dipping
2T + 1/4 C Dry white or Chicken broth, divided
5 T Lemon juice, divided
3 Garlic Cloves, minced
1/8 tsp Hot pepper sauce
1/2 C Flour
1/2 C Parmesan cheese, grated
1/4 C Parsley, minced
1/2 tsp Salt
3 tsp olive oil, divided
2 T Butter

Directions:
Directions:
Flatten chicken to 1/4" thick. In a shallow dish, combine the egg and 2 T wine or broth, 2 T lemon juice, garlic, and hot pepper sauce. In another shallow dish combine the flour, Parmesan cheese, parsley, and salt.
Coat chicken with flour mixture, dip in egg, then coat again with flour mixture.
In a large skillet, brown chicken in 1.5 tsp oil for 3-5 minutes on each side or until juices run clear. Remove and keep warm.
In the same pan melt butter. Add the remaining wine or broth and lemon juice. Bring to a boil. Boil, uncovered, until sauce is reduced by a fourth. Drizzle over warm chicken.

This dish is one of my favorites! Most anything goes with it. Rice pilaf and roasted veggies are a nice choice.
