Chicken:
2 Tbsp soy sauce
2 Tbsp vegetable oil
1 tsp sugar
Garlic
Ginger
4 boneless skinless chicken breast

Mix soy sauce, oil, sugar, garlic and ginger together, pour over chicken. Marinade overnight.

Chile Lime Dressing (can be made night before):
½ cup hot water
¼ cup sugar
¼ cup unseasoned rice vinegar
¼ cup fish sauce
1 to 2 Tbsp lime juice
1 to 2 Tbsp minced red or green jalapenos

Mix hot water and sugar, then adding rice vinegar, fish sauce, lime juice and jalapenos; set aside.

1 (6 oz) package angel hair pasta
Shredded carrots
½ cup cilantro
½ cup mint leaves
Crushed peanuts
Lettuce/bok choy
Cucumber
Bean sprouts
Green onions
Toasted sesame seeds
Lime wedges

Slice and dice vegetables, place into separate bowls. Grill chicken, cut into strips and set aside on a plate. While chicken is cooking, cook noodles, drain and place into a bowl. To serve, allow each person to assemble their own combination of ingredients and add dressing.

Janelle provided this bowl sample: Lettuce/bok choy, topped with cooked noodles, then chicken, then the herbs, veggies, toasted sesame seeds & peanuts. Add juice from a lime wedge (optional) and some dressing.
