Banana Bread Recipe

3-4 Over Ripe Bananas (mashed)
⅓ C. Melted Butter
1 C. White Sugar
1 Egg (beaten)
1 tsp. Vanilla
1 tsp. Baking Soda
Pinch of Salt (approx. 1/8 tsp.)
1½ C. Flour

Directions:
Directions:
1. Preheat oven to 350 degrees.
2. Mix melted butter into mashed bananas in a large bowl.
3. Stir in sugar, egg, and vanilla.
4. Sprinkle baking soda and salt over wet mixture, blend together.
5. Add flour and stir until just mixed.
6. Pour mixture into a sprayed 4"x8" loaf pan for one big loaf or divide into two pans for smaller loaves. 7. Bake 45 minutes to 1 hour.
8. Remove from oven and let bread cool in pans at least 30 minutes.
9. Loosen sides of bread with knife and remove from pans to cool completely before wrapping.

Recipes works well in Muffin pans sprayed with cooking spray. Bake at 350 for 20-25 minutes.

This bread freezes very well. It is also a good recipe to make your own by adding fresh berries, flavored baking chips, nuts etc. It always comes out moist and delicious. If adding fresh fruit it may take an additional 10-15 minutes baking time. Making muffins cuts down the baking time. Muffins also freeze well. Just freezes muffins on a baking sheet, then place in a zip lock bag, removing excess air. Then remove only the number of muffins you need, thaw & enjoy!
