3 Tbsp. Oil
2 lb. Hash Browns (frozen)
1 small Onion Chopped
1 Green Pepper Chopped
1 Red Pepper Chopped
2 C. Cubed Ham (Sausage or Bacon)
10-12 Eggs Beaten
1½ C. Shredded Cheese
Salt and Pepper to taste

Directions:
Directions:
1. Heat oil in a large skillet.
2. Add hash browns, onion, and peppers. Cook until potatoes begin to brown.
3. Spray a 9"x13" dish.
4. Spread potato mixture in dish.
5. Top with meat.
6. Pour eggs over layers, season with salt & pepper.
7. Gently stir to coat all ingredients with eggs.
8. Sprinkle with cheese, cover and refrigerate over night.
9. Bake uncovered at 375 degrees for 35-45 minutes.

In place of chopped onion, red & green peppers you can use Potatoes O'Brien for the same flavors. Or eliminate the onions & peppers if not to your liking.
