1 13 3/4-oz pkg hot roll mix
1 cup grated Parmesan cheese
1/2 pound ground beef
1/4 chopped onion
1/4 cup chopped green pepper
1 clove garlic, minced
1 16-ounce can tomatoes, cut up
1/2 of a 6-ounce can tomato paste
1 4-ounce can mushroom stems and pieces, drained
1 teaspoon sugar
1 teaspoon dried basil, crushed
1 teaspoon dried oregano, crushed
1/2 teaspoon fennel seed
2 cups shredded mozzarella cheese

In a large bowl dissolve yeast from roll mix in 1 cup warm water. Stir in flour mixture & 1/2 cup of Parmesan cheese. Cover & let rest 10 minutes. With greased fingers pat dough out onto bottom & halfway up sides of greased 15 1/2 x 10- 1/2 x 1-inch baking pan. Bake at 375º till deep golden brown, 20 to 25 minutes.

Meanwhile, in medium skillet cook ground beef, onion, green pepper, & garlic till meat is brown & onion is tender. Drain off excess fat. Stir in un-drained tomatoes, tomato paste, mushrooms, sugar, basil, oregano, fennel, 1 teaspoon salt, & 1/8 teaspoon pepper. Cool and chill till needed.

Before serving, spread meat mixture over the baked crust. Sprinkle with mozzarella cheese & the remaining Parmesan. Bake at 375º till bubbly, about 20 to 26 minutes. Let stand 5 minutes before cutting.
