1/2 cup shortening
1 cup sugar
3 egg whites
2 cup flour
2 tsp baking powder
1/4 tsp salt
1 tsp lemon extract
2/3 cup milk (or water)

Directions:
Directions:
Cream shortening, salt, and sugar. Add egg whites unbeaten, blend well & beat until smooth. Alternate flour and milk, sifting baking powder in last bit of flour. Add lemon extract. Bake in well oiled cake tins 20 minutes at 400º.
