2 cups flour
2 tsp cinnamon
3/4 cup veggie oil
2 tsp vanilla
2 cups sugar
3/4 cup milk
1 cup chopped nuts
Small can crushed pineapple
2 cups shredded carrots
1 tsp baking soda
4 oz coconut
2 eggs

Directions:
Directions:
Beat eggs. Add oil, milk,sugar, and vanilla. Add combined dry ingredients. Add pineapple, carrots, nuts and coconut. Bake 350 for 55 minutes.

Frosting: 6 oz soft cream cheese, 3 tb milk, 1 tb orange rind, 6 cups powdered sugar, 1/2 stick butter.
