1 tsp Vanilla
2 Sticks Soft Butter
2 Cups Sugar (I cut the sugar in half and use 1 Cup)
4 Eggs separated (at room temperature if eggs are small use 6)
2 Lbs Dates/chopped
1 Qt Nuts/chopped (walnuts, pecans, or almonds)
1 1/2 Cup Flour
1/2 tsp Baking Powder
Pinch of Salt

Grease and flour cake pans 1st.
Sift flour, baking powder, salt together and add dates and nuts. Make sure the dates and nuts are coated well with the flour.
Beat sugar and butter till creamy and add in egg yolks one or two at a time till well mixed.
Beat in vanilla.
Beat egg whites until stiff. (set aside)
Mix batter (egg, sugar and butter) into date/nut mixture. (May have to use your hands to make sure that all the dry flour is mixed in.)
Mix beaten egg whites into mixture - again using your hands to mix.
Put mixture into prepared cake pans and bake at 350º for 45 minutes to 1 hour. (If you use loaf pans it may take less than an hour to cook. With a tube (bundt) pan it takes 1 hour usually. For loaf pans you will need at least two.
