1 pound Flounder fillets, boneless and skinless
4-6 tablespoons melted butter
1 sleeve Ritz-type crackers, crushed
1 tsp garlic powder
1 tsp chili powder
1/2 tsp ground cumin
1/2 tsp ground coriander
the zest and juice of 1 lime
salt & pepper

Preheat oven to 350º. Arrange the flounder in a 9x13 greased baking dish. Season with salt & pepper, set aside. In a medium bowl, combine all ingredients and mix. Place cracker crumb mixture on top of fish. Bake for 20-30 minutes, until fish flakes easily. Serve hot.

This is a take on traditional New England Baked Cod, using lime and southwest spices instead of the traditional lemon and dill. Serve with salsa and/or hot sauce, if you'd like. Goes nicely with Corn & Poblano casserole.
