1 lb ground beef
1 diced onion
1/2 diced green bell pepper
2 scallions. sliced, with greens
1 cup carrots shreds
1 small head of cabbage, thinly sliced
2 cloves garlic, minced
1/4-1/2 cup soy sauce
salt and pepper to taste
1 pkg egg roll wrappers
oil for frying

Directions:
Directions:
Brown ground beef and onion in a large dutch oven. Drain. Add peppers, carrots, scallions, garlic and cabbage to beef mixture and stir. pour 1/4 cup soy over all and add salt and pepper. Cover and cook, stirring occasionally, until cabbage is soft. Uncover and reduce liquid in pan to almost nothing. Stir, taste and add more soy sauce if needed. reduce liquid again if you added more soy.

Remove from heat and cool slightly. Place about 1/4 cup filling diagonally across egg roll wrapper. Fold bottom up, sides in , and roll tightly. Set aside on sheet pan and repeat until all filling is used up, or until you run out of wrappers.

Heat about 1/2 inch of oil in a small frying pan. Cook 3-4 egg rolls at a time, not crowding, and turning as needed to brown all sides. Place on paper towels to drain. may be placed on a warm oven as needed.
