1 T butter
2 tsp. minced garlic
¾ cup orzo
1 can (14 oz) chicken broth
1 cup fresh spinach, coarsely chopped and packed in cup
¼ cup grated parmesan cheese
¼ c toasted pine nuts, optional

Directions:
Directions:
Melt butter in a saucepan.
Add garlic and sauté on medium for about two minutes.
Add the orzo and cook additional two minutes. Stir often.
Add the broth and turn heat to high until it boils.
Once boiling, reduce heat to medium/low and let simmer for about 12 minutes until broth is absorbed and orzo is tender.
Turn off heat. Stir in spinach and cheese and pine nuts if desired.
