(1) 29 oz can peach halves
1 cup packed brown sugar
1 cup all purpose flour

1 tbsp margarine
1 tsp baking powder
1/4 tsp salt

2 tbsp margarine
1 egg

1 cup sugar
1/2 cup milk

Directions:
Drain peaches, reserving 1 tbsp juice. Set aside.

Grease a 10" cast iron skillet with margarine. Sprinkle brown sugar evenly over bottom of skillet. Dot with 1 tbsp margarine. Top sugar and margarine with peach halves, cut side of peaches down. Drizzle with reserved peach juice.

Combine flour, baking powder and salt. Beat the 2 tbsp margarine with electric mixer for 30 seconds. Add sugar, beat on medium speed 1 minute. Add egg, beat on medium speed 1 minute. Add flour mixture alternately with dry ingredients. Beat just till combined after each addition. Pour over fruit in skillet.

Bake in 350º oven for 35 to 40 minutes. Let cake cool for 10 minutes. Invert onto a serving plate. Serve with ice cream or whipped cream if desired.
