2 cups parboiled rice
1-2 cans coconut milk
1 tbsp Butter or Oil
2 tsp Salt
1 Habanero, whole
1/2 cup yellow onion, chopped
1 tsp thyme

Directions:
Directions:
Drain liquid from beans into a measuring cup
3-1/2 - 4 cups of liquid (refer to your rice instructions). Liquid to include juice from beans, coconut milk and water. I use more coconut milk and less water.
Put liquid into pot and add butter, salt, thyme, onion
Boil on high 2 minutes
Turn down to medium and add habanero
Let simmer 20-30 minutes, depending on rice instructions
Let sit for a few minutes and fluff with fork
