3 lb. roast, fat removed
2 whole peeled onions (about 2 in. diameter)
3 bay leaves
1 clove garlic
1 tsp. salt
½ tsp. black pepper
½ tsp. allspice
½ tsp. cardamon
½ tsp. cinnamon
½ tsp. nutmeg

Directions:
Directions:
Cover roast with water in a large saucepan. Add all the other ingredients. Simmer 3 hours over medium heat. Replace water as needed. Drain.

Slice thinly and serve. Delicious hot or cold.
