½ small, seedless watermelon (about 5 lb.)
1 medium Vidalia onion
4 oz. feta
6 whole mint sprigs, to garnish


Directions:

Cut the flesh from the watermelon and cut it into bite-sized pieces. Peel and slice the onion into thin rings.

Combine melon, onion, and feta in a bowl. Pour the dressing over them and toss gently until evenly mixed. Garnish with mint sprigs and serve immediately.

¼ c. red wine vinegar
½ c. extra virgin olive oil
2 T. fresh mint, chopped
large pinch of salt
fresh ground pepper

Directions:

In a bowl, combine the vinegar, salt, and pepper. Whisk until salt is dissolved. Slowly whisk in oil until emulsified. Stir in chopped mint. Correct seasonings if needed.
