2 cans, cooked, sliced carrots
1 T. cumin
T. paprika
1 T. Yemenite zhug (more or less to taste)
2 T. extra virgin olive oil
1 large clove (1 T.) of garlic, minced
juice of one small lemon
1-2 T. flat parsley, chopped
pinch of salt

Directions:
Directions:
Combine all ingredients, adding fresh parsley and olive oil last. Refrigerate at least 1 hour to allow flavors to meld. Serve cool or at room temperature.
