2 cans, sliced carrots
1 Tb. Yemenite zhug (to taste)
1 Tb. cumin
1/2 Tb. paprika
2 Tb. extra virgin olive oil
1 large clove garlic, minced (1 Tb.)
juice of one small lemon
1-2 Tb. flat parsley, chopped
pinch of salt

Directions:
Directions:
Combine all ingredients, adding fresh parsley and olive oil last. Refrigerate at least 1 hour to allow flavors to meld.

Serve cool or at room temperature.

You can make this with fresh carrots, however I think the texture of canned carrots is better for this particular dish. If you use fresh, add salt to the cooking water.
