6-8 yellow crook-necked squash
1 med. onion
1 can chopped green chilis
1 T. flour
3 T. butter
16 oz. cottage cheese
1 egg
1 T. parsley
3 C. Monterey jack
¼ C. parmesan
Salt and pepper

Directions:
Directions:
Sauté squash and onion in flour and butter w salt and pepper and chilies until “tender crisp". Put in baking dish. Mix egg, cottage cheese and parsley and add to baking dish. Top with Monterey jack and parmesan. Bake at 350º for 30 minutes.

Mike's note: I have wanted the recipe for Perri Mancil’s squash casserole since the first time I tasted it. Hard to get excited about a casserole using yellow crook necked squash, you say? Just try this. The flavor mix is above awesome, trust me. The cottage cheese and green chilies, the Monterey jack and parmesan…just amazing. There is a reason that Perri’s family almost arm-wrestles over the leftovers (Reed always got them, I think because he had seniority).
