1 ½ c. celery, chopped
1 c. onion, chopped
4 T. oil
1 14.75-oz. can salmon, drained and bones removed
2 eggs, lightly beaten
4 T. coconut milk
¾ c. coconut flour
¼ c. fine almond meal
½ tsp salt
½ tsp pepper
olive oil cooking spray

Directions:
Directions:
In a skillet, sauté celery and onion in oil until tender. In a bowl, combine the salmon, egg, milk, bread crumbs, salt and pepper, and celery/onion mixture.

Spray mini-loaf pans or ramekins with cooking spray. Transfer salmon mixture.

Bake at 350º until a knife inserted in the center comes out clean, approximately 40 minutes depending on size of pans.

Can be served with a dill sauce.

Can substitute bread crumbs for coconut flour/almond meal for non low-carb version.
